Miso greens noodle pot

Crispy bacon lasagne

Don’t let cooking solo stop you from enjoying a hearty lasagne when you’re in the mood for some comfort food. This easy bacon lasagne recipe combines handy readymade ingredients to create delicious layers of pasta, cheese and sauce. The key is to use fresh lasagne sheets which only need to soften for a few mins before using. If you like, you can also make a veggie version with aubergine instead of bacon and vegetarian cheese

Lentil and apricot tagine

Capture the flavours of north Africa with this quick and easy vegetarian tagine recipe. Traditionally tagines need lengthy simmering, but this lentil version only takes 4 mins in the microwave. Flavour comes courtesy of fruity apricots, honey, spicy harissa paste and cherry tomatoes, creating a healthy and fragrant dish. You could even assemble this ahead to take to work – just add water and microwave when you’re ready.

Jam doughnut cake

When your next sugar craving hits, this simple pud will satisfy in a flash. Dusted with cinnamon sugar and oozing with jam, this doughnut mug cake recipe ticks all the same delicious boxes that a standard doughnut does. Just mix and microwave, then top with a little extra sugar and jam, if you like.

Blueberry muffin cobbler

Part fluffy muffin and part fruity dessert, this gorgeous blueberry dessert mug combines the best bits of both those American classics. When cooked, the fresh blueberries create a juicy sauce under a squidgy egg-free muffin-cobbler topping – gorgeous topped with ice cream. Just grab a spoon and tuck in.
